Mediterranean Vegetable Tray Bake
This recipe is packed full of fibre and is great in supporting our gut microbiome.
DF / Vegan
3 mixed peppers
2 red onions
300g cherry tomatoes
2 medium sized sweet potato
2x whole garlic
Dill tops olive oil.
Wash and then roughly chop all the vegetables. Arrange the ingredients on a baking tray and avoid putting them too close together.
Cut the garlic in half and nestle between the veg.
Season with salt and pepper and drizzle with good quality olive oil.
Bake for 30-60 mins at 200c/gas mark 4 until the veg is soft and golden brown.
After baking squeeze over half a lemon and garnish with dill tops.
